Quickie: Dinner

So, we got a lot of food from our CSAs recently and managed to use some of this today for dinner.  Here’s what we used.

From Chestnut Farms:

  • Smoked garlic and herb chicken breast

From Red Fire Farm:

  • Kohlrabi
  • Spinach
  • Scallions
  • Oregano

We’d never had kohlrabi before, so this was an adventure.  The hubby peeled and sliced the kohlrabi and we put some (homemade!) butter and salt on it and roasted it in the oven for a bit before putting the chicken breast in with it.  He then threw some quinoa, chicken boullion, scallions, and oregano into the rice cooker, and once that was cooked he stirred some spinach through to wilt it.

The result?

    Excellent combo — love the Red Fire Farm greens, but am always a little bewildered by kolrabi. Roasting it and then adding the chicken (yay, protein!) seems a smart way to use slow, high heat to soften it up and get flavors to blend. Nice photo, too!
